Banana Ice Cream Stuffed Peanut Butter Cups

These frozen peanut butter cups are SO delicious and super easy to make! You start by making your own ice cream out of frozen bananas (yes, bananas!) and the rest is just all assembly. Freeze for an hour or two and they are ready to enjoy.

Instructions
Step 1
* Blend the bananas in a food processor until coarse, about 1-2 minutes.
Step 2
* Add yogurt, 2 Tbsp peanut butter and honey then blend until smooth and creamy, about one minute.
Step 3
* Add the peanut butter cups, if using, and pulse until broken up and blended throughout the ice cream. Pour into a bowl and keep in the freezer until ready to use.
Step 4
* Add chocolate and coconut oil to a liquid measuring cup and microwave for 25 seconds. Stir and continuing microwaving and stirring in 10 second increments until completely melted.
Step 5
* Add liners to a 12-cup muffin tin. Pour in enough chocolate to coat the bottom of the cup. You will use about 1/2 of the chocolate.
Step 6
* Add a heaping tablespoon of the ice cream on top of the chocolate. Place a dollop of peanut butter in the center then cover with another tablespoon of ice cream.
Step 7
* Use a spoon to spread the remaining chocolate over the top. Sprinkle with flaky salt and freeze until completely frozen, about 1-2 hours.
