No-Bake Peanut Butter & Jam Tarts

Tarts are undoubtedly one of my favourite no-bake desserts. They are easy to make, packed with whole food ingredients and the combination of PB & J takes them to the next level! Plus, aren’t they gorgeous 😍?

Ingredients
12 servings
Tart Shell
1 CupRolled Oats
1 CupCoconut
Desiccated
1 CupMedjool Dates
Soaked in hot water for 5 minutes and drained
0.25 CupVanilla Buttercream Protein Powder

0.25 CupPeanut Butter
1 TbspVanilla Extract
Jam
Garnish
5gVegan Dark Choc
Melted
6Fresh Raspberries
Instructions
Step 1
Place all tart shell ingredients into a food processor and process until smooth.
Step 2
Place all jam ingredients into a bowl and mash until smooth. Be patient with it, the raspberries with eventually melt and become jam-like.
Step 3
Push tart shell mix into to a 6-hole silicon tray and use your hands to create a well in each. Fill with the raspberry jam and set in the freezer for 30 minutes. Garnish with chocolate and enjoy!
Step 4
Store in the refrigerator for up to 5 days and the freezer for 3-4 weeks.
