Instructions
Step 1
Scrub potatoes in place in a pot. Just using bigger potatoes like russets cut them into quarters or into sixths.
Step 2
Fill the pot with water to cover potatoes. Bring to a boil, then reduce the heat and simmer until potatoes can be pierced easily with a fork, about 25 minutes.
Step 3
Drained the potatoes and transferred to a large mixing bowl.
Step 4
Add oil, vinegar, salt, pepper, and dill. Toss to combine. Serve warm.
