Fresh Apples with Barley and Pine Nuts

Instructions

Step 1
In a small saucepan, combine barley, water, and bay leaves.
Step 2
Bring to a boil and continue to boil, uncovered for 5 minutes.
Step 3
Remove from heat, cover, and let stand for about 1 hour, or until all the liquid has been absorbed. (This yields about a cup of barley.)
Step 4
Meanwhile, in a large serving bowl, toss apples with lemon juice.
Step 5
In a medium nonstick skillet, heat oil and rosemary over medium-high heat.
Step 6
Scoop in barley and pine nuts and saute until barley grains are separate and almost dry; about 4 to 5 minutes.
Step 7
Add barley, pine nuts, and yogurt to apples and toss well.
Step 8
Serve warm or at room temperature with grilled meats or poultry. (Substitute cooked rice for barley!)
