Instructions
Step 1
Preheat the oven to 425*.
Step 2
Rinse and Dice potatoes, mince garlic, rinse and slice the lemon.
Step 3
Place diced potatoes into a bowl, Drizzle with olive oil, salt, pepper, garlic. Add lemon zest and lemon juice and mix until coat evenly.
Step 4
Lay parchment paper on a cookie sheet. Place potatoes on the parchment paper.
Step 5
Place in the oven for 22-25 minutes. Pull out and serve along side your main dish.
