Ingredients

4 tablespoonsunsalted butter
at room temperature
¼ cupvegetable oil
¼ cupgranulated sugar
¼ cuplight brown sugar
1egg
lightly whisked
½ cupcanned pumpkin
not pie filling
1 ½ cupflour
gluten-free, blend if low fodmap
½ cuprolled oats
old fashioned, use gluten free, if following gluten-free diet
½ teaspoonbaking soda
¼ teaspoonginger
½ teaspooncinnamon
cloves
optional
¾ cupsemi-sweet chocolate chips
½ cuppepitas
Instructions
Step 1
Preheat oven to 350 F and line cookie sheet with parchment paper
Step 2
In medium bowl, add softened butter, oil, granulated sugar, and brown sugar; blend until creamy.
Step 3
Mix in egg and pumpkin.
Step 4
Add in flour, rolled oats, baking soda, ginger, cinnamon, and cloves (if using); stir to combine.
Step 5
Fold in chocolate chips and pepitas.
Step 6
Drop heaping tablespoons of dough onto cookie sheet, about 1 1/2 inch apart.
Step 7
Bake for 12-15 minutes.
