1carrot

1capsicum

500gchicken thigh
diced

lemon pepper seasoning

2cloves of garlic

olive oil

2 Tbsred pesto

½ cupcouscous

1 Tbschicken stock powder

parsley

Creamy pesto dressing

¾ cupwater

Instructions
Creamy pesto dressing
Step 1
Combine all ingredients and mix well
One pan
Step 2
Thinly slice carrots into half moons, thinly slice capsicum
Step 3
Heat pan on medium with oil and cook chicken with lemon pepper seasoning until brown - transfer to bowl. Cook carrot and capsicum until soft and add garlic and cook until fragrant
Step 4
Return chicken and add red pesto. Add water, couscous and stock powder and bring to boil. Place lid on top and remove from heat. Is done when all water is absorbed into couscous
Step 5
Top with Parsley and creamy pesto dressing
