I just know this is going to be one of those recipe that I’ll make over and over for the rest of my life! 
I saw @Julius Roberts make this and I had everything to recreate it except for fennel, so I used some porcini mushrooms instead (I know they are nothing alike but just needed something haha) it was SO GOOD. I can’t even explain how much flavour is in here. And its the perfect amount of creaminess. Not a super heavy creamy pasta, but just a light creaminess.

Instructions

Step 1
Remove the skin from the sausages
Step 2
Fry on high heat with the olive oil until well browned.
Step 3
Break them up as they fry. Once cooked set aside
Step 4
Start cooking your pasta, until al dente and don’t forget to save the pasta water
Step 5
Deglaze the sausage pot with the wine and porcini water.
Step 6
Let this cook off for 5 - 7 minutes then add the leek, porcini mushrooms and fennel seeds with a big pinch of salt.
Step 7
Sauté for 5 minutes
Step 8
Add the garlic and chilli and saute for a further 5 minutes
Step 9
Then mix in the lemon zest and parsley
Step 10
Add the sausage back in with the cream, the pasta and half a cup of the pasta water.
Step 11
Mix well to combine and then add the parmesan and lots of pepper
Step 12
Add the lemon juice and continue stirring over low heat until the everything is all silky and emulsified, adding more pasta water if needed
Step 13
Serve with an extra pinch of parmesan and enjoy
