You know we couldn’t end this series without an amazing dessert to bring it home!! These GRILLED PINEAPPLES 🍍 are marinated in dark rum and spices before caramelizing on the grill. Sweet mascarpone cream and reduced balsamic tie it together for an incredible dessert experience. Topped with coconut 🥥 flakes for some texture and crunch nobody will be able to resist this!!!

Instructions
Step 1
1. Peel and slice pineapple. Marinate in 1 cp of rum 🍹, brown sugar , and spices. Place in fridge for a couple hours.

2. Make mascarpone cream by combining cheese, heavy cream , 1 tbs of rum and powdered sugar.
Step 3
3. Make reduced balsamic by combining vinegar and white sugar and cooking till a thick syrup. You definitely want to do this outside as reducing vinegar can smell a bit pungent.

4. Pre heat grill on high and grill pineapple until slightly tender and caramelization is achieved.
Step 5
5. Cut pineapple into chunks removing the core.
Step 6
6. Assemble by placing a handful of pineapple chunks. Topping with cream. Drizzle on a little vinegar reduction. Top with coconut flakes.
