Instructions

Rhubarb compott

Step 1
Remove the ends of your he rhubarb and slice it.
Step 2
Add all the ingredients to a small pot. Let it cook once. Then reduce the heat to low. Cook it for about 15min stirring occasionally.

Sandwich

Step 3
Slice the bread. Spread each side with olive oil and toast until golden brown.
Step 4
Slice the goat cheese and chop the almonds.
Step 5
Top the bottom bread slice with the goat cheese, almonds, rhubarb compott and arugula.
Step 6
Stack the other bread half on top and enjoy!
