My Favourite Grilled Cheese

I’m calling this my favourite grilled cheese because it has all the components that I love — sourdough bread, the combination of three different types of cheeses, and of course the buttery cheesy crusted outside.
You can choose any cheeses you like of course, but having one of them being smoked adds so much flavour. I used smoked provolone here.
I love adding cheese on the outside for an extra crispy crust too.

For the sandwich crust

Step 1
Preheat a nonstick skillet on medium low heat
Step 2
In the meantime, butter the outsides of the sourdough bread.
Step 3
Place 2 tbsp of the shredded mozzarella on to the skillet spreading it as the same size of your bread.
Step 4
Place the buttered side of bread right on to the cheese and add the cheese slices on the top of the bread.
Step 5
Place the other piece of bread on top of the cheese and push it down with a spatula.
Step 6
Repeat with the other side of the bread and add the rest of the mozzarella to create the cheese crust. Both sides need about 3 minutes to toast evenly.
Step 7
Serve hot!
