Instructions

Step 1
Wash peppers, setting aside tops, remove core and seeds, and cut off just enough of the bottom of the peppers so that they will stand on their own on a flat surface

Preheat oven to 350
Step 3
Please peppers in a baking dish and bake for 15 minutes at 350 Chop up leftover tops of peppers and onion

Sautee onion until almost translucent

Shred pepper jack cheese
Step 6
Add peppers and sauté 3-4 minutes

Add garlic and sauté for 1 minute

Add meat crumbles and sauté until heated through

Lower heat

Add spices – salt, onion powder, cumin, paprika, red pepper flakes, black pepper, and optional creole seasoning

Add chopped parsley, Worcestershire sauce, balsamic vinegar

Add tomato sauce or salsa
Step 13
Add rice and half the cheese
Step 14
Season cooked bell peppers with salt and pepper
Step 15
Overstuff peppers with meat mixture
Step 16
Top with half of the remaining cheese
Step 17
Bake for 15 minutes at 350 Add remaining cheese
Step 18
Bake again for 10 minutes at 350 OR turn on broiler and watch very carefully for cheese to get brown
