Instructions

Step 1
Separate the eggs and whisk the egg whites until stiff.
Step 2
In another bowl mix the butter, sugar, and egg yolks then beat in the ricotta a spoonful at a time.
Step 3
Sift the flour and cocoa powder into the mixture, fold it then fold in the egg whites.
Step 4
Spoon into muffin tins, half full.
Step 5
Bake at 180 for 15-20 minutes.
