1.5 lbshrimp
peeled & de-veined
1 Tbsshaoxing cooking wine
or mirin
¼ tspsalt

1egg white
1 cupoil
1 cupcornstarch
⅓ cupAP flour
½ tspbaking powder

Instructions
Step 1
Season shrimp with salt & pepper, cooking wine and add 1 egg white. Mix and set aside. In a separate bowl, combine cornstarch, flour, baking powder then mix. Make a slurry with cornstarch and water and set that aside as well. In another bowl, combine honey, soy sauce, sugar, and chicken stock. (Taste and adjust)
Step 2
Coat the shrimp evenly with the cornstarch/flour mixture. When the oil is hot, fry for 1-2 minutes on each side or until golden in color. Times may vary depending on size of the shrimp. Drain on paper towel.
Step 3
In a pan, add oil, garlic and green onions. Cook until fragrant then add sauce mixture. Add slurry to thicken up the sauce and toss the shrimp in and coat evenly with the sauce. Top with sesame seeds and chopped green onions. Serve this immediately while the shrimp is still crispy.
