Instructions
Step 1
In a mortar and pestle, mash together the cumin, paprika, garlic, and chiles until a thick paste forms.
Step 2
Add the sherry vinegar and mash again to combine.
Step 3
While grinding, slowly drizzle in the olive oil, pausing to let it emulsify as you go, until smooth but still a little textured.
Step 4
Salt to taste.
