Instructions

Step 1
Cut the tomato in half and, over a bowl, grate it so that the pulp and juices collect, leaving you with the skin.
Step 2
Take your barley rusk (I used a 'frisella' but any kind of hard bread works) and soak it in water for 10 seconds (leaving it wet outside and just starting to soak, but not full of water inside). Place it on your serving plate and drizzle it with olive oil and a pinch of salt. Cover with the tomato pulp and juice.
Step 3
Over the top of the tomato add the feta, olives and capers. Top it all with some more olive oil, salt and dried oregano and let it sit for 15/20 minutes before serving (this way the rusk can absorb the juices and not be too hard)
