400gvacherin fribourgeois
1clove garlic
⅔ teaspooncornflour
350mlwhite wine
lemon juice
kirsch

Instructions
Step 1
Rub the pan with the garlic clove.
Step 2
Mix the grated gruyere and the cornflour in the pan. Mix in the white wine and lemon juice and bring to the boil, mixing constantly.
Step 3
Turn down the heat, add the cubes of vacherin and mix vigorously until the cheese has been melted.
Step 4
Turn down the heat, the fondu should not boil/bubble.
Step 5
Add the kirsch and cayenne pepper.
Step 6
Keep the pan on a low heat to serve.
