Step 1
Preheat oven to 375 degrees. Line two rimmed baking sheets with parchment and spray with nonstick cooking spray; set aside

In a small saucepan, bring 1 cup water, the butter, and salt to a boil. Cook, stirring, stirring, until butter melts. With a wooden spoon, stir in flour. Continue to stir until mixture pulls away from sides of pan, about 5 minutes. Remove from heat and let cool for 2 minutes
Step 3
Add eggs, one at a time, beating after each addition. Continue to add eggs until batter comes together with a smooth, silky, and shiny texture; it should fall off the paddle and form a soft peak that falls over
Step 4
Transfer batter to a pastry bag fitted with a 1 inch plain tip (such as Ateco #806). Pipe batter into desired-size mounds, 1 inch apart, onto sheets. (If batter starts spreading. place in refrigerator to chill slightly.) Gently brush tops with egg wash and sprinkle with salt. Combine cheeses in a bowl and sprinkle over tops of gougères.
Step 5
Bake for 10 minutes; do not open oven door. Reduce oven temperature to 325 degrees, and bake until puffs are golden brown and feel light and hollow inside, about 7 to 10 minutes more.
