Instructions
Step 1
Heat butter & oil in a large pan, add onion and garlic, cook for 5-7 mins until softened.
Step 2
Mix in flour and add milk in stages stirring regularly to avoid any lumps.
Step 3
Add in rice, stock, broccoli, thyme and season well. cook for 12 mins until rice is soft.
Step 4
Mix in chicken and half of cheese, mix through and then top with remaining cheese.
Step 5
Cook under grill until cheese is melted, golden and bubbling;img.
