Instructions
Step 1
Drain oranges, reserving ¼ cup.
For the Salsa
Step 2
In a large bowl, combine oranges, pecans, onion and cilantro.
Step 3
Sprinkle chicken with salt and pepper.
Step 4
In a large skillet, heat oil over medium-high heat.
Step 5
Add chicken; cook and stir 4 minutes.
Step 6
Add garlic; cook 1 minute longer.
Step 7
Stir in reserved juice.
Step 8
Bring to a boil.
Step 9
Reduce heat; simmer, uncovered, 4-6 minutes or until chicken is no longer pink.
Step 10
Top with salsa; serve with rice.
