Instructions

Step 1
Bring a medium size pot of water to a boil. While waiting for the water to boil, cut florets off of fresh cauliflower if using fresh. When water comes to a boil, add 1 teaspoon to the water. Put cauliflower in the water. If fresh, about 10-12 minutes, until beyond fork tender, frozen cook to pack directions. Once cooked, drain all of the water from the pot. Let the cauliflower sit in the colander for at least 3 minutes. Push down on the cauliflower with the back of a large spoon getting as much was out as you can. Put the cauliflower back into the pot that you used to cook it and add 2 tablespoons of butter. Mash the cauliflower with either a potato masher or use a hand blender. Add pepper to taste.
