Instructions
Step 1
Place 3 Tbsp Green Curry Paste in hot heavy based pan and fry until fragrant. If unaccustomed to spicy foods add 2 tbsp paste.
Step 2
Add diced chicken and cook until browned slightly. Add carrots
Step 3
Gradually incorporate stock, Kaffir lime leaves, lime juice, fish sauce,soy sauce,sugar and beans Simmer for about30-45 mins, stirring occasionally.
Step 4
Add coconut milk or coconut cream and stir gently to combine.
Step 5
Simmer for about 5 mins or so.
Step 6
Taste and adjust fllavour accordingly (sometimes needs more lime juice)
Step 7
Once cooked, take off heat and let sit for 5 mins to let flavour develop. Serve with rice, fresh chilli and fresh coriander to garnish.
