Instructions

Step 1
Place the carrot, onion, mushrooms, and garlic in a blender and pulse until finely chopped.

Set aside.

In a medium skillet over medium-high heat, brown the beef, cook- ing thoroughly, for about 6 minutes.

Add the vegetables and cook, stirring, for 4 minutes.

Stir in the vinegar, Worcestershire sauce, tomato sauce, and tomato paste.

Cover and reduce the heat to low.
Step 7
Simmer the mixture for 5 minutes.
Step 8
Meanwhile, preheat the oven to broil.
Step 9
Toast the rolls cut-side up under the broiler for 1 minute, watching carefully so they don't burn.
Step 10
Divide the Sloppy Joe mixture between the two rolls and serve.
Step 11
TIP: Spoon the extra tomato sauce into a clean ice cube tray and freeze the sauce, covered, for three or four months. Add the cubes whole and frozen to simmering sauces and soups when you need a little extra tomato flavor.
