Instructions

Step 1
Make a steam bath by adding boiling water to a bowl. In a second bowl, and the honey, butter, and sugar. Place that bowl on top of the steam bath and stir contents until combined and melted.

In a separate bowl, beat eggs and baking soda together. Slowly add the egg mixture to the honey, butter and sugar mixture, stirring continuously
Step 3
Once the ingredients are fully incorporated, cook for an additional 30 to 40 minutes over the steam bath, until color becomes a rich caramel brown. Remove the bowl from the steam bath, add vanilla extract, flour and cinnamon.

Preheat the oven to 350

Add a generous amount of flour to work surface, separate the dough into teo evenly sized balls. With a rolling pin, roll each ball into a thin layer. Move the dough onto baking sheet.
Step 6
Bake each cake layer until golden brown (5-7 minutes) To make the layers perfect circles,, cut with stencil. Save scraps for decorating. Allow cake layers to cool before beginning assembly.
Step 7
Whip all ingredients of cream together on low
Step 8
Assemble the cake by frosting each layer with equal amounts of cream. Stack layers then frost the top.
Step 9
Break down the remaining cake scraps til there only crumbs. Sprinkle over the assembled cake. Allow the cake to sit in the fridge overnight. Remove 30 minutes before serving.
