5th of July Cabbage Salad | Ukrainian Coleslaw

A combination of spring green or winter white cabbage with cucumber and dill is widespread in Ukraine. I am sharing our family recipe for this salad.
In the US, I gave it the name 5th of July Salad. It became a tradition in our family to celebrate Independents Day with plenty of grilled meats. This salad is an excellent way to let the stomach rest the next day.
The thinner the slicing, the faster the cabbage softens after tossing. Mandolin allows for slicing the cabbage quickly and evenly thin.

Step 1
In a bowl, combine sliced cabbage, salt, sugar, and black pepper and toss. Leave at room temperature for 15 minutes for the cabbage to soften.
Step 2
Add chopped dill and scallions, vinegar, and toss. Taste and adjust the amount of salt, sugar, or vinegar to make them balanced.
Step 3
Add diced cucumber and mayo, and toss. Serve the salad topped with roasted sesame.
