Instructions
Step 1
Finely slice all vegetables & ginger
Step 2
Sauté shallots till softening in 4tbsp oil, season with salt
Step 3
Add celery and sauté till softening
Step 4
Add garlic and sauté till all mire poix is soft and translucent
Step 5
Add butter and allow to soften
Step 6
Add parsnips and season with salt and pepper. Stir till parsnips coated in oils then cover and sweat until parsnips are softening
Step 7
Add ginger and sweat for briefly
Step 8
Add water & double cream and bring to a gentle simmer over a low heat until parsnips are soft and mushy
Step 9
Blend soup, season to taste whilst hot, then push through a fine mesh sieve discarding the pulp that remains in the sieve.
