Braised chicken with olives and lemon

Instructions
Step 1
Season the chicken with salt & pepper
Step 2
In a skillet, heat olive oil to high
Step 3
Cook chicken for about 5 min each side
Step 4
Remove chicken and let rest
Step 5
Lower heat to medium. Stir in shallots, cooking until soft
Step 6
Deglaze the pan with a little bit of chicken stock and then add remaining chicken stock and return chicken
Step 7
Scatter garlic, thyme leaves, lemon juice and olives in with the chicken
Step 8
Bring to a boil and then reduce heat to its absolute lowest level
Step 9
Cover and cook for about an hour, until chicken is tender
Step 10
Remove cover and raise heat. Bring to a boil and reduce sauce to a gravy texture
