Step 1
Preheat oven to 300F

Pat chicken dry, add salt & pepper

Heat a cast-iron skillet on medium/high heat with butter

Sear chicken skin side down until crispy and set aside when done

Lower heat to medium/low

Add garlic and shallots 2-3 minutes

Add tomatoes and wine, simmering until the wine has reduced down

Add chicken stock and bring heat back up to medium

Add basil, lemon zest, parmesan rind and chicken thighs

Bring to a boil, add to oven for 1 hour

Remove chicken from skillet when done

Discard parmesan rind and bring sauce to a boil, 5 minutes

Lower heat, stir in cream and grated parmesan and season with salt and pepper

Add chicken thighs back in

Let simmer for a few minutes before it's done

Let it cool down before serving
Mushroom Rice & Peas

Soak dried mushroom in hot water for 10-15 minutes, drain, and reserve water

Heat the oil on sauté in instant pot and add the onion 2 minutes

Add the garlic, green seasoning, and cook for 1 minute

Add the peas and pasta, and sauté for 1 minute

Add the water, salt, thyme, and pepper to taste

Pressure cook on high for 15 minutes.
