Instructions

Step 1
In saucepan medium heat simmer down blueberries, sugar and salt for 20minutes
Step 2
Blend the mixture with immersion blender or standing blender
Step 3
Strain through fine mesh strainer
Step 4
Weigh out strained liquid
Step 5
Add liquid back into sauce pan bring to a boil, add 1% agaragar by weight, simmer for 2 minutes
Step 6
Spread thinly on sheet pan, cover with plastic. Store in fridge until hardens (~2 hours) and cut into desired shape
