High Protein Lentil Patties
Lentils are a fantastic source of protein and fibre. These patties are a great option for vegetarian nights and lentils are a great low cost vegetarian protein. These patties can be used for babies who are following a baby-led weaning approach, or by any child who likes to have a meal or snack that is like a pattie. Adults also love these too!

Combine lentils, celery, carrot, spring onions, water and curry powder in a

Reduce heat and simmer, covered, for about 20 minutes or until thickened.

Remove from heat and cool.
Step 5
Stir in 1 cup of breadcrumbs and egg.
Step 6
Cook tablespoon amounts on medium heat fry pan.
Step 7
Serve with vegetables, rice, and a sweet chilli mayonnaise.
