Step 1
Preheat oven to 400°F.
Mix all dry ingredients in a large bowl. Soften peanut butter in microwave until pourable. About 20 seconds. Careful. It can burn! Add melted peanut butter, vanilla and honey to the dry ingredients.
Mix well, using clean hands to smash the mixture and thouroughly blend wet and dry. If too dry still, add small amounts of honey or a few tsp of water and re blend. Spread mixture onto a sheet pan or cookie sheet. Bake at 400°F for until browned on top. Open oven, redistribute the mix and put back into oven. Turn off oven and leave door closed to allow granola to dry. Store at room temp in a jar.
