All yummy things converged into one mostly healthy granola recipe. Super versatile too! I use walnuts, peanuts and dried cranberries, but you can really use anything you want.

Instructions

Step 1
Preheat oven at 300°F

Mix the first 4 ingredients in a large mixing bowl.

Separate the dried fruit so the pieces aren't stuck together.
Step 4
In a separate smaller bowl, add the butter, peanut butter, and honey, and heat in microwave for 30 seconds. Stir and repeat x 1.

Add vanilla. Using fork or small whisk, emulsify the yummy concoction so it's well mixed, then add the dried fruit and stir. The date syrup isn't necessary, but I like it sweet and date syrup is sweet, so add it here if using.

Pour mixture over the oats and fold and stir well. The better it's mixed the better it tastes.
Step 7
Beat eggs till thick n frothy but not stiff. Pour over oat mixture. Stir well! This is optional if you'd rather have loose granola. The egg whites make it stick together in little heavenly nuggets.
Step 8
Spread into a parchment lined baking sheet evenly. Bake in a heated oven at 300° for 35 minutes.

Let sit to cool and firm up. Once cooled, break up into pieces and store in an airtight container.
