Preheat the oven to 350℉. Lightly coat a silicone mini bagel pan with cooking spray.
Place the flour and yogurt in a medium bowl; stir well with a wooden spoon until just combined and then keep mixing the dough in the bowl with your hands until smooth, about 1 to 2 minutes (if the dough is too sticky to knead, add 1 to 2 more tbsp of flour); let the dough sit for 5 minutes.
Divide the dough into 6 equal pieces. Roll each piece into a ball and press it into one hole of the prepared pan to form a bagel shape; repeat with the remaining ingredients to form 6 bagels.
Lightly coat the bagel tops with cooking spray; sprinkle each with a pinch of optional salt or other seasoning. Bake until the bagels are lightly browned, about 15 to 20 minutes. Gently remove the bagels from the pan and enjoy warm or at room temperature.
