Lamb and Halloumi Meatballs
Meatballs have been an absolute staple of our blog - partly because they're such an easy dish, partly because they're always good fun to make. On the blog you'll find recipes for meatballs cooked in Guinness, buffalo chicken meatballs and my own personal favourite: our hot take on IKEA meatballs.
To be honest, it's just a luxury to enjoy a whole plate of IKEA meatballs without the boiling rage of an ongoing argument spoiling the taste.
Has anyone ever managed to navigate a trip around IKEA without their marriage falling apart like soggy cake? The three months when Paul and I were designing our own kitchen and ending up in IKEA at least twice a week were dark days indeed - we've weathered the storms of infidelity far more smoothly than trying to choose the correct handles for our drawers. It was lucky that Paul was able to storm off into the bedroom department and sob into a show pillow otherwise he would never have got it out of his system.
Don't be afraid of lamb mince - it does indeed have a higher fat content than the likes of pork mince or turkey mince, but the fat adds the flavour.
You can lower the fat content by having a butcher make the mince up for you: never be afraid to make friends with your local butcher. Our butcher loves the sight of us - I think we've paid for his caravan twice over.

Instructions
Step 1
Preheat the oven to 200°C fan/425°F/gas mark 7.
Step 2
Mix together the lamb mince, halloumi, 1 teaspoon of oregano and the paprika, being careful not to over-mix.
Step 3
Divide the mixture into 20-24 portions and roll them into meatballs.
Step 4
Spray a large baking sheet with a little oil and place the meatballs on the sheet. Bake in the oven for 20 minutes.
Step 5
Meanwhile, place a large saucepan over a medium heat, spray with a little oil and add the onion. Cook for 2-3 minutes, until it is starting to turn translucent. Add the garlic and stir well, then add the rest of the ingredients to the pan. Bring to the boil, then reduce the heat and simmer for 10-15 minutes, until thickened.
Step 6
When the meatballs are ready, add them to the pan and cook for another 10 minutes.
