Nando’s Dinner at Home

Instructions

Step 1
Mix the peri salt ingredients together
Step 2
Remove the backbone from the chicken, by flipping it breast side down, and firmly running either side of the inch wide backbone, then pulling it out using the knife to cut any other bits away

Flip it breast side up, and press down in the middle with your palm to break the chest bone and flatten it out
Step 4
Season with a tsp of the peri salt and the MSG.
Step 5
Crush the garlic on top and pour the Nando’s sauce all over.
Step 6
Add more peri salt on top and sugar then place on a wire rack over a baking tray and bake for 45 minutes at 200C

Bake the oven chips for required time

Once cooked, toss with some peri salt

The Spicy Rice

Step 9
Fry the rice with oil and salt on medium heat for 3-4 minutes to toast the starch. This means you can avoid washing it.

Add the water, peas, and cover, and simmer for 10 minutes.

Turn the heat off and let sit for another 10 minutes.

Roughly dice the onions and peppers

Fry in oil for 3-5 minutes til soft

Add the spices and salt and fry for 2 minutes before adding the rice and peas and stir fry to combine and serve up

The Coleslaw

Slice up the cabbage and onion into super thin strips and grate the carrot then place in a large mixing bowl

Squeeze the lemon juice into the bowl and add all the other liquids. The double cream makes it extra creamy

Adjust the flavour with salt and pepper to your liking
