Instructions

Step 1
Add the cottage cheese to a large salad bowl . I used a creamy one with 35 % protein and a dry one for extra texture but any kind really will do .

Thinly slice the scallions and finely chop the dill use also the stems as they have so much flavor then add this to the bowl . Slice a cucumber in half lengthways then use a spoon to scoop out the seeds . Now dice the cucumber into bite size pieces and add it to the bowl. Season with a little salt and lots of black pepper . Black pepper can be spicy so add as much as you feel you can eat but remember it gives a lot of flavor to this . Mix the salad up and it’s ready to go . It doesn’t need oil but if you feel like you want to add a splash of olive oil do so and enjoy
