Sumac Chicken Phyllo Rolls (Musakhan Rolls).

A Simple Traditional Palestinian dish that has reached worldwide fame, and known as "Musakhan". The magic behind this dish is the sweetness of the slowly caramelized onions, coupled with the tanginess of the sumac.

Instructions

Step 1
Debone the boiled chicken or the rotisserie chicken.
Step 2
Discard the skin and bones, shred the remaining chicken into small pieces.

On low to medium heat slowly sauté the onions in half the oil

Add 3 tbsp of sumac, 1 tbsp all spice and 1 tbsp salt, stir to evenly distribute the oil, all spice and sumac.
Step 5
After several minutes add the chicken and continue to mix all the ingredients together over low to medium heat for about 5 to 7 minutes.
Step 6
Add remaining oil, roasted pine nuts, sumac, salt and continue to stir until all the oil, all spice, sumac and salt are absorbed (3 to 5 minutes).

In a small bowl, whisk together the cornstarch and water (this will help you seal the spring rolls).

Take 2 phyllo pastry sheets on a flat surface, put 2 tbsp of the chicken filling, wrap it folding the sides to give the shape of spring rolls and sealing the edges with the flour paste.
Step 9
Once you are done making all the rolls, transfer on to a baking tray and brush them with some oil (or brush it with beaten egg, optional).

If you want to make it right away, refrigerate the rolls for 10 -15 mins and then arrange them in a greased baking tray.

Preheat the oven at 250C, Put the baking tray into the oven for 10 -15 minutes or until nice slightly golden in color.

Serve warm aside with garlic sauce or tahini sauce.
