Strawberry Creamcheese Galette

Let’s make a gorgeous summer galette😋 Strawberry Creamcheese Galette Ingredients For Galette: 1 1/2 cups flour 1/4 cup almond flour 2 tbsp powdered sugar Pinch of salt 1 tbsp lemon zest 1 1/2 stick cold butter (grated) 1 tsp white vinegar 2 tbsp ice water For the cream cheese filling: 2 oz cream cheese 2 oz mascarpone 1/4 cup granulated sugar 1 small egg( if it’s a big half egg) 1/2 tsp Lemon zest Vanilla For Strawberry Filling: 4 cups strawberry 1/4 cup granulated sugar 1 1/2 tbsp cornstarch Fresh mint (optional) For Egg Wash: 1 small egg 1 tsp vegetable oil Instructions In a large bowl, combine the flour, almond flour, powdered sugar, salt, and lemon zest. Add grated cold butter and using a fork mix and cut the butter until the mixture form chickpea-size pieces. Evenly drizzle the vinegar and ice water and using a wooden spoon or your hand mix the dough just until combined as shown in the IG Reel. Transfer the dough onto a plastic wrap and gently knead the dough for 1 min so that everything comes together. Gently push the dough into around one-inch thick disk and cover with plastic wrap. Chill the dough for 30-40 min. Preparing the Cream Cheese filling: In a medium bowl, add all the ingredients and mix until the mixture is smooth and creamy, set aside. Preparing the Strawberry Filling: In a medium bowl, combine strawberries, sugar, cornstarch, and lemon zest. Preheat the oven to 380F. On a lightly floured surface, roll the dough into a circle about 1/4-inch thick using a rolling pin. Transfer the dough onto a parchment paper as in the Reel. Spread the cream cheese filling on the bottom of the dough within 2 inch of the edge (leave 2-inch border around the edge). Add the strawberry filling on top. Fold the edges of the dough over the strawberries as in the Reel. Brush the edges with egg wash and sprinkle sugar, poppy seeds, or nuts. Bake the galette until golden brown for around 40-50 min. Remove it from the oven and let it cool to room temp and serve with vanilla ice cream. Bon appétit!
