Step 1
Preheat the oven to 190C.

Step 2
Chop sausages into 2.5cm long pieces, and place on a baking tray along with pieces of capsicum and zucchini, and drizzle in extra virgin olive oil.
Step 3
Roast the sausage and capsicum until sausage pieces are cooked through (about 25-30 minutes). Capsicum and zucchini should be soft.
Step 4
Meanwhile, steam the broccoli, pumpkin, and potato.
Step 5
Serve the roasted sausage and capsicum with pumpkin, broccoli, and potato. Drizzle with extra virgin olive, balsamic vinegar, torn basil leaves, and crumbled goat cheese.
