Ingredients
4 servings
Salad
2 cupsdry quinoa
6 ozbaby spinach
8 ozcherry tomatoes
more or less as desired
6green onions
1can of sliced black olives
Optional
4Avocados
more or less as desired
Dressing
Instructions
Step 1
Cook the quinoa according to package directions.
Step 2
Meanwhile, make the dressing in a small bowl; whisk together ingredients and set aside.
Step 3
Roughly chop the spinach and place in a large bowl.
Step 4
When quinoa is done cooking, add it to the large bowl with spinach and toss. The heat from the quinoa will lightly wilt the spinach.
Step 5
Slice the green onions, halve the cherry tomatoes, and dice the avocados. Add the green onions, tomatoes, olives & dressing to the spinach & quinoa. Stir to combine. Add the avocado and lightly toss. Served immediately or refrigerate for flavors to blend.
