Instructions

Step 1
Grease a large pan with cooking fat and heat over a medium-high heat. Add prawns and cook for 1-2 minutes.
Step 2
Add the pesto, oregano and chili paste. Cook for a minute and drizzle with lemon juice.
Step 3
Add the courgettes and cook for 2-5 minutes, or until cooked to taste. Add the tomatoes and season.
Step 4
Just before serving, drizzle with olive oil and garnish with fresh basil leaves and parmesan cheese
