Ingredients

1 ½ cupswater
2 cpotatoes
cubed peeled, or frozen hash brown potatoes
2carrots
small, grated
1onion
small, chopped
¼ cgreen pepper
chopped
1jalapeno pepper
seeded and chopped
1garlic clove
minced
1 Tbspbeef bouillon granules
½ tsalt
1 lbGround beef
cooked & drained
2 ½ cmilk
divided
3 Tbspflour
8 ozAmerican cheese
cubed
1 tcayenne pepper
optional
0.5 lbSliced bacon
cooked and crumbled
Instructions
Step 1
In a large saucepan, combine the first nine ingredients; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender.
Step 2
Stir in beef and 2 c. of milk; heat through. Combine flour and remaining milk until smooth; gradually stir into soup.
Step 3
Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Reduce heat; stir in cheese until melted.
Step 4
Add cayenne if desired. Top with bacon just before serving.
