Instructions

Step 1
Preheat oven to 180oC

Grease + line a muffin tin, or use 9 muffin cases
Step 3
Mix flour, baking powder, bicarbonate of soda + cumin seeds
Step 4
Whisk together egg, buttermilk + oil
Step 5
Mix wet and dry ingredients together gently
Step 6
Squeeze excess water from courgette and add to mixture
Step 7
Add 2/3 feta cheese to mixture
Step 8
Fill the 9 muffin cases evenly, and sprinkle the rest of the feta cheese on top
Step 9
Bake for 12-15 minutes till golden brown
