Goats Cheese Tart

This recipe is a generic one. It can be made with any combination of cheeses that are known to melt fairly well. I use goats cheese with soft rinds. Be generous with the herbs, parsley, chives, sorrel and lovage all work well. Be careful when seasoning the mixture, as the cheese is often quite salty.

Step 1
Pre heat the oven to 200C. Line a 24 cm tart tin with the Pate Brisée (Shortcrust Pastry) and blind bake for 20 minutes.
Step 2
Remove from the oven and reduce temperature to 180c.
Step 3
Whisk the eggs with the chopped garlic and parsley, then stir in the cheese. Pour this mixture into the warm tart shell. Using a fork, move the cheese lumps around to distribute evenly. Expect to see lumps of cheese sitting in the mixture:this is correct. Grind pepper over and bake for 20-30 minutes until golden and puffed up.
Step 4
Serve warm. The cheeses become tough and hard when cold.
