Step 1
Slice the ginger into rounds then pound it in a mortar and pestle until broken and bruised.

Simmer the ginger & pandan leaves in water for 20 minutes. Remove the pandan leaves & add dark brown sugar to taste. Strain the tea. This tea will keep for at least a week in the fridge.

Step 3
Bring a pot of water to a rolling boil. Gently drop the glutinous rice balls into the boiling water. Cook until they float to the surface. Drain throughly the cooked rice balls and place in the ginger tea.
Step 4
Combine sugar & water in a saucepan & bring to boil. Decrease the heat to medium low & add ginkgo nuts. Simmer for 30 minutes or until ginkgo nuts are cooked & caramelised into a shiny golden color. Serve the sweet glutinous rice balls in individual bowls with added gingko nuts.
