Instructions
Step 1
Cook the macaroni in boiling water according to package instructions. Drain well and place in shallow ovenproof dish.
Step 2
Meanwhile melt butter in a saucepan. Whisk in flour over low heat and cook 2 minutes until bubbling and separated.
Step 3
Off the hear, stir in milk a little at a time, stir until combined. Return to heat and cook until thickened.
Step 4
Add pepper to taste and 3.5 oz of the cheddar, stir until combined. Preheat the broiler to high.
Step 5
Pour the sauce over the macaroni and stir well to coat evenly. Add remaining cheddar and the parmesan to the top, add pepper to taste. Heat under broiler until cheese is melted. Let stand 5 minutes and serve with broccoli.
