Instructions
Step 1
Preheat the oven at 430 F or 220 º C.
Step 2
Peel the potatoes and cut them into cubes.
Step 3
Place the potatoes on a baking sheet with a little bit of oil and sea salt to taste. Bake them for 40 minutes.
Step 4
Heat the oil in a pan and cook the chorizo (finely chopped) until golden brown.
Step 5
Serve the potatoes with the enchilada sauce, the chorizo and the sour cream on top. You can add minced chives too.
