G - Chicken Enchiladas Suizas

Inspired by the Swiss’ love of dairy, this 1950’s recipe took Mexico by storm! You'll stuff enchiladas with smoky pulled chicken, smother them in a rich cream sauce and bake to crispy, cheesy perfection.

Instructions

Step 1
Preheat the oven to 180°C/ 160°C (fan)/ 350°F/ Gas 4
Step 2
Boil half a kettle.
Step 3
Peel and finely slice the brown onion.
Step 4
Heat a large, wide-based pan (preferably non-stick with a matching lid), with a drizzle of olive oil over a medium-high heat.
Step 5
Once hot, add the chicken thighs with the sliced onion, smoked paprika, ground cumin, cayenne pepper, a grind of black pepper, and then cook for 2-3 min on each side to seal in the juices.
Step 6
Whilst the chicken is cooking, dissolve the chicken stock cube, tomato paste, soy sauce and red wine vinegar in 150ml boiled water – this is your tomato stock.
Step 7
Chop the coriander as finely as possible.
Step 8
In a small bowl, mix together the coriander, sour cream, and a pinch of salt — this is your enchiladas suizas sauce.
Step 9
Once the chicken is seared on all sides, add the tomato stock to the pan and cook, covered, for approximately 10 min further, or until the chicken is cooked through, and the sauce has thickened.
Step 10
Transfer the cooked chicken to a clean board and shred apart using two forks – this technique is known as 'pulling'.
Step 11
Transfer the pulled chicken back to the pan and give everything a good mix up – this is your pulled chicken filling.
Step 12
Divide the pulled chicken filling between the tortillas.
Step 13
Roll each tortilla up and arrange them into the oven-proof dish.
Step 14
Top with the enchiladas suizas sauce and grate the cheddar cheese over the top.
Step 15
Put the dish in the oven and cook for 15-20 min or until the cheese has melted – these are your chicken enchiladas suizas.
Step 16
Serve the chicken enchiladas suizas up with a bit of salad and enjoy!
