Instructions
Step 1
Cut chicken into bite size pieces and add 1 inch grated ginger, 2 cloves garlic, 2 tbs of wine, 1 tb of soy sauce. Toss and marinate for at least an hour.
Step 2
Combine .5 cup flour and .5 cup cornstarch, toss chicken to coat and fry in oil at 375 for about 3-4 minutes. let cool on wire rack. season with salt while hot.
Step 3
Combine cornstarch and vinegar and whisk. Heat a wok over medium high, add 2.5 tbs of veg oil, once shimmering att ginger, garlic and arbors. Cook and stir. once garlic is barely toasted add wine and allow to cook out for 20 seconds.
Step 4
Add 1 tb of chili flakes, 3 tbs of sugar, half cup of chicken stock, 3 tbs of soy sauce, and some msg.
Step 5
Top with sliced scallions and sesame seeds and serve.
