Ingredients
2 servings
2chicken breast
1 tspgarlic powder
1 tsponion powder
1 tspitalian seasoning
1 tspcayenne pepper
olive oil
1onion
3garlic cloves
2 cupscherry tomatoes
1 ½ cupheavy cream
1 cupbaby spinach
Parmesan
salt

For the mashed potatoes
Instructions
Step 1
Season the chicken breasts with garlic powder, cayenne pepper, Italian seasoning, salt and pepper
Step 2
Add olive oil to a pan, then brown chicken breasts on both sides
Step 3
Remove chicken and place to the side
Step 4
Add onion and garlic to the same pan, sauté, then add cherry tomatoes
Step 5
Let that sauté for 2 minutes
Step 6
Add heavy cream and a pinch of cayenne if you’d like

Add spinach and Parmesan

Mix everything well
Step 9
Add back the chicken, put the lid on and let cook

Cook the chicken through, scrape bottom of pan regularly so the spinach under the chicken doesn’t burn or stick
For the mashed potatoes
Step 11
Boil 1 pound of russet potatoes in salted water
Step 12
Once potatoes are fork tender, drain them
Step 13
Add melted butter, salt and pepper
Step 14
Mash that together, then gradually add your heavy cream
Step 15
Plate the potatoes then drizzle the sauce from the chicken mixture over them
Step 16
Place a chicken breast over potatoes and drizzle more sauce and then serve!
